This is beyond stupid how fucked up the phone market is. I'm still using my 2008 laptop with newest LTS (x)Ubuntu, but my 2018 Android phone lost official support in 2020... Thanks to that, now I have iPhone (longer support) and Fairphone 5 (I like how they try to upstream everything for this phone and promise really long support).
About your question: Should be fine. As long as browser is up-to-date, she doesn't connect to unknown WiFi networks/Bluetooth devices and she is not targeted. The easiest security fix is to not have anything worth anything on the phone :D
I wish I had the same problem as you do with your car. Mine is old enough that it doesn't have Bluetooth (I'm not the first owner and Bluetooth was an "extra" in this model) but new enough that there is no cassette player (and no built-in aux input) :)

I know this anecdotal but I'm using FF on Android (Lineage OS without google apps/micro g etc. - only F-Droid) and the only site that causes issues is google.com. For some <sarcasm>unknown</sarcasm> reason it servers images in much lower quality. Of course it's not a technical limitation. If you change your UA to chrome everything goes back to normal. That was the biggest reason I moved to DDG.

I definitely don't have this issue. I have over a thousand tabs opened, it definitely doesn't reload all of them while I'm switching between apps.
So.. technical debt and "hacks" ?:D
What if Google decides that they will ignore that header? Is there anything preventing them from doing that? Do we know why they decided to even implement this "workaround" with header?

If I want to watch someone knowledgeable working on my favorite language I will look for this content (or I will find that they are doing this via some other means - like Twitter, irc, Mastodon etc.) and unless experience is not horrible for some reason I don't care if it's Youtube, PeerTube, RSS feed with links to the video on ftp server. If you delivery something unique enough (in this case I assume that there are not that many people providing such content on similar level) for specific group of people you can probably leave YouTube and be fine.
But if I'm interested in something less specialized like for example tech news and I'm not attached to specific creator I might not even notice that someone left the platform. If I don't see "Linus tech tips" in my video feed I'll watch "Gamer Nexus" or "Hardware Unboxed" or something else.
Sad truth is that when I want to see video about something general I look for it on YouTube and don't even bother searching for other source. I think that YouTube "monopoly" is not on hosting video content but on discoverability of it. And I say this as someone who tries to avoid Google products as much as possible.
Why are we all talking about creating more stores? Shouldn't we opt into creating systems API for stores? That way you could choose store application and have products from all repositories (stores) available in there.
On most Linuxes you add repository and it doesn't matter if you use official package manager, graphical one, or some unofficial bash script. You are able to install same software.
