Why invest in an LLM API when you are a financial service provider?
I can’t see any obvious reason to use Stripe more because of this new product.
The only hypothesis I can think of is that AI token could be a ”currency” in the future. (Which doesn’t make sense when everyone will have local LLMs)

Also, it only shows one search result and goes all in on that, so if that is not what I wanted, it's pretty annoying :)

In order to do card payments the merchant (IGG) need to be able to refund. It they cannot, the acquirer must do so. Anyways, one of the purposes of Visa and MasterCard is protection from these scams. If you don't get 100% of what you bought, you can get refunded by the card issuer, which will collect acquirer/merchant.
You bring up some other really valid points: - Exchange rates; if you charge in EUR and settle in GBP, a charge of 0,66% will be added.
- Test and production is almost the same; before you go live, your account will be in test mode, and after you are live you will always be able to send in "test=true" to make test transactions. No separate environments (unless you create multiple merchant accounts, which you can).
- Price; We'll charge a percent fee for all European countries except for Sweden which also has a fixed transaction fee.
