I'm not so pessimistic that I think the Toyota techs are swabbing your car and sending it over to 23andMe.
Personally, I'm worried (not sure that's the right word) that China will just do it's own thing in the near future. It was a miracle that LTE phones work worldwide, IMO. China had/has its own 3G CDMA tech. I wouldn't be surprised if the market gets fragmented in later releases of 5G or with 6G.
Obviously there's costs to running servers somewhere, but that hasn't stopped companies from making similar decisions for a variety of other services.
5G mobile standard is NR (stands for New Radio) from 3GPP. There is no competing mobile standard from anyone else.
Biggest change compared to LTE is the formal standard for millimeter wave communication for mobile. Previously it's been used for fixed wireless access and/or satellites. We'll see how it plays out in a mobile consumer environment.
