Like I said, RxSwift is ready, SwiftUI/Combine isn't.
SwiftUI is a definite move away from interface builder.
Good rule of thumb is an application usually needs to support at least one prior major iOS version and SwiftUI is only available on 13. Don’t know current adoption numbers but I believe there is still a significant % of users still on 12.
Just don’t be surprised when SwiftUI apps require major refactoring to work on iOS 14.
I haven’t even touched SwiftUI yet as I’m orders of magnitude more productive with RxSwift and every single realworld-ish example implementation I’ve seen makes my eyes bleed.
I think a lot of times orgs/teams go through major restructuring in the middle of recruiting or otherwise rethink hiring strategy and unfortunately candidates oftentimes get left hanging. Also almost no one wants to deliver bad news, especially to a stranger.
Important thing is not to beat yourself up about it too much Always remember that interviews are 2-way streets and the signals you listed scream that it would be a complete effing nightmare to work there.
I overheard someone once say they used NotificationCenter as the data binding mechanism in an MVVM app. Big Yikes.

Stick with RxSwift MVVM/MVP if you want reactive functional programming.
The tools physics uses to measure elementary particles lacking the precision to not disturb the system being observed is a failure of the tools and not sufficient to reasonably imply that human consciousness has anything to do with the fact that observing a system disturbs the system under observation.
Far more interesting and grounded along these lines is Penrose’s Orch OR; consciousness is a fundamental physical structure or law of the universe itself that our brains have evolved to access.
A growth at all costs mindset in many cases leads to redundant and irresponsible overuse.
Growth at all costs.
