Combine clean CSS with SCSS (http://sass-lang.com/) for mixin awesomeness and also PIE.css (http://css3pie.com/) for CSS3 on IE. Thats pretty much the winning combo IMO.
Will they hire someone remotely, especially someone with heavy ruby/rails exp?

Why ROR? Speedy development, fun programming language, easy to build, test, iterate, repeat etc. Easy to migrate DB's, lots of scaffolding to reduce amount of code you need to write. Tons of great plugins written for the stack, very active community, some incredibly talented developers work on the stack.
ROR is perfectly suited for building out a great web app, quickly. And yes, it does scale ;)
Blame them (Flaky Corp) for acting unprofessional.
Go into your current manager, tell them you are in a really difficult and awkward situation. That you have had some communications very recently that have made you very uncomfortable with the new company and made you reconsider your decision.
Your Boss will understand that messed up stuff happens sometimes and will want to avoid interviewing for the position. Tell your Boss you honestly do not want to leave the company now given this situation and that you want your old job back.
Value yourself and take charge of the situation. Dont just allow an awkward ego-feeling or unprofessional behavior by Flaky Corp to own you!
Thats why millions of users are using hundreds of large scale web apps right now built on Rails and/or Ruby (ie: Github, Slideshare, Hulu, Justin.tv, Basecamp, Alice.com ...the list goes on and on http://rails100.pbworks.com/Alexa+Rankings).
Right...
Might want to do some homework before making such a statement. True Ruby has memory issues. Running Ruby enterprise edition by passenger helped us a ton. Typically memory issues have to do with poorly written ruby more than anything...which rails makes it easy to do....like Product.all.each type stuff ... stupid example
