That's half the reason we have futures contracts. If they were only on nonperishable goods you could just buy the goods and store them in a warehouse. Futures contracts allow you to do something similar with perishables.

If you do not yet put in mushrooms it is fungible. If you put in mushrooms it is no longer fungible as it has already been fungid.

This came from the times when Congress wasn't deadlocked. If someone cornered a different small market they could make another law against that.
