As with any startup, we are a small team doing a million things, and sometimes things (such as interview rounds) may take longer than they should because a critical need for the business was prioritized.
The reason you haven't heard back yet is because the most recent interview round is still on-going and a decision has not been reached yet. You should expect to hear back this week.

In the end I ended up placing special HTML tags where the ESI tags would have been placed, and then making AJAX calls (on dom ready) to swap out the static content with the dynamic user-specific content.

If you've worked with Magento then you know it relies heavily on cookies and sessions. Even with all difficulties of modifying Magento I was able configure Magento and Varnish to work together perfectly within a week.
I can point you to the Magento site running with Varnish if you send me an email.

Chicago Boss is an open-source web framework inspired by Rails and written in Erlang. http://chicagoboss.org/projects/chicagoboss/wiki
Looks like a nicely coded and laid out project.
I had a set of products from Yahoo! that needed their equivalent product in a set of products from Amazon. I indexed all the Amazon products into Xapian and let the search functionality do its magic by using the Yahoo product title as the search keyword. It also had a scoring mechanism and worked flawlessly for my needs.
Or if you want to experiment, seems most async frameworks have some kind of chat demo that you could potentially modify and expand for your use
