A very good UI/UX on their web service, a clear API that's usually well supported for domain TLS auth (certbot), a very complete documentation, and a good support.
Browser settings that should be done are: - disabling loading of external fonts - adding the ublock origin extension, priceless to "lighten" websites by removing as much crap as possible - aggressive resource caching, especially for CDN-based libraries
Also, I'm really a fan of DevOps, the dashboard is really complete and versatile, and allows for more serious planning than just issues.
I don't have trouble working with Azure, including for user management and access rights, where it's always been a hell in AWS to learn.
About GCP, I can't compare, they never accepted my bank credentials.
There's not a lot of regulations for health and safety around most ingredients, so I'd say that also plays:
Fewer risks of decay and such
Browser -> Firefox? So you completely drop the Chromium rendering engine (plus, firefox is awesome)
Photos -> what is your need, exactly?

Here, we usually try to own as much as we can, and only rely on services when there's no other accessible alternative.
- I had to fix the time on windows to use UTC instead of localtime - I had a bit of trouble with ext2fs on windows, it tried a few times to format my disk.
Apart from that, I'm not noticing any serious problem
- A nextcloud setup on a RAID10-backed VPS
- A local home NAS with RAID1 in place
