Hawaii got rid of all their sugar cane, replacing it with coffee and other higher-value crops.

Large swaths of the south aren't really good for growing much. Very poor soil quality.

The memory of digging post holes in red clay still haunts me.

Please don't, until burning of fields is strictly outlawed.

Burning of sugarcane to make it easier to harvest is a huge contributor to air pollution in SE Asia. And I believe some places in the US still allow it.

It still does. It lives in and between Palm Beach county through south of Lake Okeechobee.
