Will it be a pain once in 3 years when I change my phone?
Because for my carrier switching from the physical sim to an e-sim isn't straightforward. I'm wondering how switching e-sims across phones might be.

Hasn't dual-sim phones been a thing since forever? (At least in Android devices).
Also, at the moment it seems to be the only way to get two carriers going on iPhone (one e-sim and one physical sim / multiple e-sims?).

That makes it sound more difficult that it actually is. You only just have to push a pin through a hole.
If you're worried, buy a whole stack of those push-pins from Amazon. It's cheap.
