I don't know about you, but I generally don't eat the rind of aged/hardened cheese, so that's not really a problem (for me).

I regularly use parmigiano rind when making vegetable stock. Hopefully the tracker extract will add some nuance.

It's not a bad thing to let a dog chew on.... until now
