I use a rooted phone and a call recorder in magisk. It's been the only way I've found to record reliably since the last recorder I used stopped working.

I haven't tried it, but it looks like Zoom will record calls on desktop for free, or do "cloud recording" if you pay.

The default phone app on LineageOS has a native call-record button.
