Is there any mention about it on Linux Mint website?

Mint only has desktop .iso images. No server .iso images without desktop. Mint also mixes packages from Debian and Ubuntu that would probably cause conflicts on server usage.

CentOS is usually used on servers, with server .iso images without desktop.
