Apple is making lots of money by selling iPhones and services already (iCloud un such).
Charging 30% is outrageous.
The other problem is that Apple won't allow anyone to buy an app store for the iPhone.

How much do developers spend on Apple's iOS SDK? Zero. Would it be better if the 30% was shifted to a license fee for the SDK? Would the politburo accept those terms?
Is the value too steep? Idk, how does supply and demand work? Why do people develop for the market if the cut is slow large.
That said, people would be still complaining if Apple's cut was only 10%. People complain about the 3-5% that payment processors charge retailers. People complain about the $.35 Arco gas stations charge for using a debit card. People complain about the dime grocery stores charge for paper bags in California.
