There ARE services right now for handling invoicing and dunning. I use churnbuster for the latter currently and it is money well spent.

Any good recommendations on the invoicing?

I recommend https://quaderno.io/ used them with four different kinds of business running through Stripe including a SaaS doing > $1 million ARR. Works great and their customer support is excellent.

I use quickbooks online

Xero.
