Don't they still?

I see headers like this in GMail:

    Received: … Sat, 16 Jul 2016 10:35:05 -0700 (PDT)

which gives me two calculations to get to my own timezone, rather than just one.

The same offset is in headers from Facebook and Microsoft, though Oracle have UTC.

That doesn't say anything about the servers timezones. SMTP is a service on top of those.

It seems unlikely that the SMTP process would run in a timezone different to the server. What benefit would that give?

They would operate a virtual machine-type layer on top of their actual linux machines. In the upper layer they could be doing whatever..
