in many countries you cannot get a SIM card without providing an ID (or in some cases you can but you have to activate it by providing your ID information - otherwise it would be deactivated and you'll eventually lose access to your phone number)

There is a setting that disables autoupload. Some people may want to minimise the number of edits made from their account, and some people may not want to leave a trace of locations they've visited together with exact timestamp they've been there.

Bitcoin also adjust difficulty - but does that every two weeks or so. would it make sense to mine for a sibling for the last block before the difficulty increase while everyone else mines for a child block with increased difficulty? thus having twice the relative hashrate for 10 min every time difficulty increases.

I've had those options on multiple OnePlus phones, but they were not present on multiple Pixels. Since Pixels are usually sold as "AOSP experience with Google flavor" are lacking this feature - I am not sure if that is that feature comes from AOSP or is only present on OnePlus phones.

There are controls to disable internet access on a per-app basis. Seen them in devices from at least two different vendors, one of them being Pixel - thus I believe this is a stock feature on at least Android 10+.
