You should consider doing your students a favor and not tie them into a single for-profit company's technology (most will go on to use whatever you have taught them since they will have come to be comfortable with it during their studies).
Consider using one of the App Container Specification's implementations -- there are already 3 prominent ones, all adhere to the standard which means their images are interchangeable and compatible with each other.
The standard is community-driven, and stable at this time. It could even become a project to implement your own implementation for your school, teaching your students not only a ton about Linux, but the principals of containerization in the process.
