Then I learned to love rsync -av. The benefits are many-fold.
tar czf - . | ssh destination "cd /remote/dir; tar xz"
tar czf - | ssh destination 'cd /remote/dir && tar xzf -'
Test that `cd` or one day you'll end up extracting in the wrong place.
