What topics to include in a college iPhone dev class?

I will be teaching a one-semester class at a state university in Georgia, USA; the students will be junior and senior undergraduates, with somewhat different backgrounds, but all of them would have taken the intro programming sequence (at least two programming courses, usually using either Java or C#), and an introduction to databases course. Our semesters consist of at least 15 useful weeks; my plan is to have one (or two :) small apps per week as assignments, and one final project at the end.

I have more info and a list of topics I am currently planning at the url above; the main question is

What topics should be included ? Which ones are optional ?

I'm interested in all opinions; if you're a pro now, what topics are more useful ? if you're a student, what would you like to see ?
