Are you arguing that LLMs can't replace humans at cognitive jobs or that AI wouldn't be able to? If the former I'd agree, if the latter it must just be a definitional issue - I don't consider LLMs to be artificial intelligent and would expect anything earning that monicker would be able to replace humans at most or all cognitive tasks.
