I thought the problem was protein toxicity.

If insects are high protein, then you're not solving the problem.

I'm guessing they have the missing fats and other nutrients :)

I used to eat rabbit often until the 2000’s. Most butcher shops in France had rabbit, presented skinned, gutted and whole. Pretty good meat!

A colleague was even including rabbit in the «poultry» category …

Well, it is very lean meat, most similar to chicken IMO :-D

They do have the best livers.

Unfortunately in the US I can only find them from fancy suppliers that are way overpriced. But if I were going to raise something in the backyard, it would be cuy...

Learn to hunt. Anyone who farms will be glad to let you hunt on their land, especially if you give them a few rabbits.
