So, with 1.1.1.1 and 8.8.8.8 being useless then, what DNS Server is recommended going forward?

Personally I use quad9 (https://www.quad9.net)

Maybe opendns or nextdns?

Opendns is literally cisco umbrella with less features. Which is one of the companies in the title.
