Ask HN: How much you can customize iPadOS?

Unfortunately Apple created great piece of hardware, new iPad Pro and keyboard, but decided to keep it crippled with iPadOS. Since under new DMA laws in EU you can install 3rd party software, I am thinking to what extent it is possible to customize iPadOS? Would it be possible, using extensions, open source and other customization, to make iPadOS more general OS like (better FS access, better support for multi tasking, etc, etc) ?
