Stock in public companies is effectively equivalent to cash, so what’s the difference? Sell on vest and buy index funds or anything you want.

That's assuming the stock price doesn't go down in the time it takes to hit your first (or any meaningful) vesting cliff.

To be fair I think most top tier companies vest quarterly so...

They do, but they don't do refreshers quarterly.
