So, how does a “Minotaur head” differ from just being a bull?

If it was attached to a minotaur body before it was decapitated, it's a minotaur head.

Can't argue with that.

In that particular case the eyes and the teeth look more human than bovine to me. I don’t know if that’s a general rule for Minotaurs though.
