The entire east coast of Taiwan is absolutely gorgeous, and Taipei - Yilan - Hualien isn't too long of a journey. If you can rent a motorbike and go further along the coast you will also enjoy a lot of nature right between mountains and the ocean.

I also hope to get there again someday, I haven't had my fill of pineapple cakes either.
