Sadly, it looks like a significant amount of the cheese in cold storage is American and Swiss [1] – they missed a fantastic opportunity to age cheddar en masse.

Is "Swiss cheese" the same thing as Gruyere? Cause if so, that stuff is cave-aged in Switzerland as well!

No, it's equivalent to what we call Edam in Europe.

Just looked it up, seems like it's more similar to Emmental.

Strategic Cheese Reserve (SCR)

Where is the Strategic Cracker Reserve (SCR)?

And the Strategic Special Reserve Port Reserve (SSRPR)?

I kinda want to try this government cheese.

I got a block back in 1980-ish when they were handing it out.

It was... unexceptional. Better than Velveeta but not memorably so.

I lived off the stuff for several years (along with the free dried milk and stale bread and mayo sandwiches). The worst part about it was all the mold you’d have to cut off. At the time, I didn’t know anything about taste. But, hey at least it kept me from starving.

Tbh I just want to bring a large block of cheese marked "GOVERNMENT CHEESE" on top to a brunch with friends.

with a proofreader's mark to insert "BIG" between those two words.

I thought the American Slice is it's main source.

This article uses “billions” incredibly loosely. First of all, I wouldn’t call 1.5B “billions”. Second, 1.5B pounds is almost certainly under 1B wheels.

Fun read otherwise.
