Wise choice to only use a metronome to set the initial tempo. Makes the groove flow much more naturally.
How does that work practically with modern DAWs? Since they all centered around tempo grids, the grid dominates the workflow, where to cut etc. How do they get around it?
I assumed they just work without any explicit tempo set in the DAW. They can mute/unmute the click tracks when recording new parts depending on if the musician needs to hear the count-ins.
