I think the restaurant should just add "No substitutions" rather than taking it off the menu.

I doubt that the waitstaff sees that as a better option, given their reliance on tips from happy diners.

So they should make whatever the customer wants, is that your point?

My point is that I wouldn't second-guess the restaurant taking it off the menu.
