Ask HN: How are you dealing with PII data in context of productionizing LLM apps

We have been working on a bunch of cool prototypes only to realize it's going to be difficult productionizing these ideas since the final version will need to work with PII data. Are there some off the shelf solutions to mask/scrub/redact PII data? Eager to learn about your experience, pitfalls.
