You can't take a written standard and put it into your mass spectrometer (or other equivalently fancy food-testing device) to calibrate it.

You don't. You take the NIST reference material and put it through your machine and compare your machine's results with the NIST results.

That's what I was getting at. Maybe we disagree about what calibrate means?
