Something like the Milk-V Duo[0]?
More options in this nice list[1].
>(This would be for a 100% 64bits risc-v assembly keyboard firmware).
I would go with a small FPGA (iCE40 e.g. LP640 or LP1K, or GW1N) and SERV[2].

There is something weird with GPIO programming though: it seems GPIOs have a strange split between the MCU and the co-processor "domain". Hopefull, we get a real access to those 25?28? GPIOs.
That said, the mpeg encoder is too much, and mpeg will want the licencing fees (in countries where this is legal). Removing it could save significant bucks on such cheap SOC.
BTW the codeberg.org document is just amazing!
Hopefully, RISC-V SOC devs will realize they should avoid mpeg and use av1, and avoid hdmi and use displayport (usb-c)...
