I'm a developer to start with.

I am currently running a services business, which I know would do well if I put my heart and soul into it.

But I can't. I can't provide repetitive services and do client support, the way I write code.

Am I burnt out or should I actually consider switching to a product business? (I have a validated idea with proven demand)

Is there something like a founder-business fit?

I don't know about founder business fit but it sounds like something people should take note of.

I'm also a developer first but I try to think about it as: I want to help people, either through my service or my product. It might be worth while to ask why you want to do any of this?

Some people get up in the morning thinking about sales, some about finances, and some about code. One reason to consider building a team is to have some of each!
