Notably, Apple mentions that your health data is end-to-end encrypted as long as you have 2FA enabled on your iCloud account. I don't see any mention of Google offering the same, which is pretty surprising for something as sensitive as health data.
If anyone has looked into this more deeply and is more familiar with the privacy risks of recording this kind of data on either OS, I'd love to learn more.
