Code samples, a small test, interview 1, interview 2, offer is pretty standard.

But that 'small test' is usually 45 minutes to an hour of programming, not a weeks worth of work.

You're not stupid for thinking they might use what you created. How did you license it on github?

I don't remember specifying anything for licensing... so probably licensed in a way where I'd have no protection. Should I pull my source (though it'd probably already be too late in the scenario I'm being duped)?

If you don't specify licensing, then there is none. If they wind up using your code, you still own the copyright.
