Does that only work for OAuth providers you've implemented, or can I use a third party provider? Specifically, can I relatively easily integrate with the Xero API? https://developer.xero.com/documentation/guides/oauth2/overv...

It is a generic connector for OAuth. Since Xero supports OAuth 2.0, it should be a similar process to integrate. Feel free to ping us [hello@tooljet.com] if you run in to any issues.
