i'm trying to remember what 80286 era dos/windows PC applications actually made use of the optional FPU and find myself coming up blank.

maybe autocad?

Falcon 3.0 had an optional extra realistic flight dynamics model that required a x87 FPU. Probably drove some sales of the 486DX.

Many inhouse programs e.g. bank trading systems.

Built using MS C also APL, Fortran and other languages

Excel, as shown in TFA.
