A bit of sleuthing from the company’s website to Wikipedia to Google Patents brought me to this: https://patents.google.com/patent/WO2021084159A1/en

It is not peas. It is a specific bacteria. They just talk about a microorganism on the website, probably because people don’t want to think about eating bacteria (though they eat yogurt just fine).

Cool thanks for looking into it. My sibling comment was poorly worded but I was curious what the protein makeup was.

According to Solar Foods website, it contains all 9 essential amino acids required by the human body. Doesn't say in what ratios (see: protein quality), but this applies to practically every other protein source too. Combine & vary in order to get all your body needs.

Besides that a good amount of dietary fiber, some minerals & B vitamins.

And non-GMO. Not that I'd personally consider this "food", but as a protein supplement: why not, looks pretty good. Where can I buy? Oh... can't. Regulatory hurdles. :-(

Whatever one may think: scores pretty high on the innovation-o-meter.
