Safari extensions vinegar and sponsorblock. Youtube in safari is a little janky compared to the app, but that’s the best I’ve found.

Vinegar is the best. It replaces hostile video players like the one on YouTube with native HTML5 <video> elements so everything works as expected (like picture-in-picture).

I just use the brave browser on ios it blocks ads ootb

Works without a jailbreak, you just have to refresh the app every 7 days but thats pretty much automated these days.
