Thank you. I've been working in bakeries since I was 5. My earliest memory is "greasing" loaf pans for pullman loaves. For 25+ years I've been cooking, making bread, and more recently is when I've become more interested in the scientific aspect. I work for an extremely reputable and well known hospitality company so I think I come with some credibility but I understand what you mean. It's a risk, will take me out of my comfort zone!
