Back in the day, all shops were barricaded, goods in the back, flat counter and you ask item by item for packaged good. For meat = butcher, what do you want and weight. For vegetables you went to a green grocer, smokes - tobacconist, just like Sherlock Holmes.
The age of trust led to self service and then supermarkets.
Why did we go self serve? Efficiency, size and labor cost driven and thus was born the shoplifter underclass - as seen in the online news, this class has grown.
I think we will head back to the day, with automation replacing the staff. You only get your hands on the goods after you pay. Here in Toronto, all gas is prepaid my cash or approved card transaction.
I see the way it is going in the Costco food court. You choose at a terminal - coke and a sausage = pay with numbered receipt = cooking counter calls your number 749 and checks your number.
So a color video terminal with touch and you drill down by name and size = click - next, and carry on for all your packaged foods = pay and the robot packs your box. They could do the same with meats. greens as long as you had a closed loop to view the actual meat/veggies you were going to get and the price for that weight = click - next, pay and robot packs the actual package you selected.
Take your receipts and your carry bags/boxes or buy same and redeem what you have paid for.
I have seen a few places like this online in various places - I think they will come to prime time in many places.
There is a tradeoff - less impulse susceptibility - but also near zero theft. Same could be done online, as I do now with Loblaws and there is a delivery fee if I get delivery or I can go and get the selection. Since I live on an island, I choose delivery as even with preselected items the round trip uses 2+ hours and $5 ferry fee - it works. At Loblaws it is 100% human manually processed - payment is the only machine function. It is about 95+% OK, I get a wrong/missing/extra item every few weeks.
