How did you catch it listening?

iOS will display an orange/green indicator in the status bar that you can press on to see which apps are currently using your microphone/camera.

Why not disabling the app's use of microphone, camera and files in the settings?

They weren't asking for a solution.

Because his daughter was recording videos (probably with audio) at other points in time.

It's like if Zoom was found to be always recording audio.
