I'm not clear on why I should provide an email address to access a chatbot.

Asking for users' emails as part of the signup process is a reasonable way to verify that your chatbot is being used by real people. I am sure to handle users' information with care and respect their privacy.
How? Is this data end-to-end encrypted? How long do you retain it? What will you do if a government shows up with a warrant or subpoena?
