Ask HN: Examples of jobs where you do something “different”?

I am Senior Software Engineer, almost 15 years of experience, etc. I worked on big companies, small studios, and startups. In office and remote. Some of them sounded more exciting than others, but in the end, you end up doing APIs, processing data/forms, interacting with others APIs/webhooks, etc. And it's always the same in every company.

What are some examples of jobs that are challenging, innovatives, and different from the rest of them? I am not saying I would be capable of doing any of them, but just wondering in general what are the experiences of the lucky ones!.
