I've been living here 7 years now, I still have to get my credit card abused.
What I had in mind is situation where the bar tender has 20+ credit card behind the counters.
I'd say the vast majority is incredibly honest.
As a long term foreigner in your country. Yes. Y'all are incredibly honest.
You would NOT leave 20+ credit card under the supervision of an underpay bartender in France.
Stuff would happen.
