It can be disabled in camera settings under "Smart HDR"

It seems you are not able to turn this off for the newer models, as I don’t see this settings on the iPhone 13 but I do see it on an iPhone 11.

I know that there is already a reply to this effect, but to repeat YOU CANNOT TURN OFF SMART HDR ON NEW IPHONES. Astonishingly stupid.
