How do you secure your email and phone online?

Use a separate email alias for everything you sign up for.

I think Apple has something like this in their "sign in with Apple" product. Or it might be called "Hide My Email". Haven't used it though.

Email aliases, cycled mobile numbers (generally burners then ported to someone who can deliver Https SMS, but still answer like a real network so it works with WhatsApp etc)

Not many services accept VOIP phone numbers now a days, they need real mobile numbers.

use multiple phone numbers (if you can) and simplelogin.com -- only give out your personal email and phone to close friends and family
