Do phone camera apps not have options to strip metadata? I've never owned a smart phone but even my DSLR's will embed proprietary metadata that has make/model and encrypted serial number. Some cameras don't encrypt the serial number.

As a fun experiment, one could modify the exif data using tools like exiftool / exiv2 / ImageMagick mogrify to strip or even change the metadata. Perhaps make the AI think you are traversing the North Pole moving at mach-4. What other silly things could one do to the AI?

Smart Phones not strip data by default but most of the social media platforms strips the data.

It is nice question. According to CantHide project if you modify your metadata to North Pole. CantHide will show your location on North Pole but it does not related to AI.
