I didn't get theory of "worms come to the surface to escape predators", shouldn't they stay put instead?

Yea, but by coming to the surface they greatly increase the likelihood of attack from birds.

That risk can be greatly reduced by coming out when it's dark. I see lots of worms on the sidewalk at night after a rainy day...
